Before opening Spiro's Countryside Restaurant in 2000, Spiro worked in the food industry in America for over 30 years, refining his knowledge of the culinary arts. Throughout his time in America, Spiro has always maintained a strong connection to his homeland, Greece. Spiro often compares the beauty of the Catskills to that of his native island of Kefalonia in Greece. At Spiro's, a welcoming spirit and wholesome food continue a tradition of hospitality and culinary excellence that Spiro has known all his life. Looking out at the Ionian sea on the west coast of Kefalonia, whose majestic beauty is known worldwide.  Kefalonia is located northwest of Greece and is part of the Ionian chain of islands, made famous in Homer's epic poem "The Odyssey".
